A former livestock economist for the U.S. Department of Agriculture, Kathryn Quanbeck is meat processing and marketing specialist. She works for the Niche Meat Processor Assistance Network (NMPAN), supporting small-scale meat processors and the farmers, ranchers and buyers who depend on them.
