I don't agree with the statement that we as consumers are causing this waste of produce by our insistence on perfection. I for one have no problem eating a bruised apple or a browning mango or a broken crown of broccoli. The general public has been conditioned to accept only unblemished produce not of their own volition but by the vendors of said produce, including restaurants, that have made this decision about what is acceptable. The only way to bring home the produce that is considered substandard (yet perfectly edible and tasty) is by dealing directly with a farmer at a local market or through a CSA. My question is how do I initiate the changes necessary at my grocery store to make more of what comes out of the ground available to eat?
