Don't buy the "humane" myth, it's just marketing to assuage consumer guilt:
http://www.humanemyth.org/

Animals reared for food are confined in unnatural environments, cannot have familial relations or create social structures, and are otherwise used without consent. They're treated as property to have their bodies violated through reproductive manipulation and are violently killed in the slaughterhouse long before their natural lifespans. "Humane" means kind, and as such, there is nothing kind about bringing an animal into the world to be enslaved for their secretions and/or slaughtered for their flesh.

We don't eat a ton of meat in my household, but I'm trying to buy more quality meat when we do. It's hard because right now we live in a teensy apartment with an apartment-sized fridge (and freezer) so I can only buy small portions of meat at the grocery store and it's hard to find pastured meats there. I have to settle for organic.

But I'm hoping to move into a house soon and may someday be able to have a chest freezer, in which case I'm gonna start buying meat a half steer and several whole chickens at a time. :)

I kind of wish that Meatless Mondays were not so much about eating less meat than about eating more vegetables. Eating less meat and switching to higher quality meat is important, but I feel that eating local and sustainably produced vegetables is equally important.
