Our hospital in Ketchum, ID, St. Luke's Wood River Medical Center is working on a similar program, being designed by John Turenne of Sustainable Food Systems. Lava Lake Lamb, where I work, has provided our grassfed lamb to the program focused on using local and sustainable food. A good change from Jell-o salad I say.

The Balanced Menus Challenge sounds great! Now they should think of doing something similar for all American households otherwise they will eventually do it once they get sick and end up in one of these hospitals from eating so much meat!
