What a wonderful article. I am exactly the same. I utilize such methods so that I can afford organic meats. I cannot believe how many people of my generatation (I am 34) do not freeze any leftovers.
My favorite tip with herbs is to buy a bunch and chop it all, use what you need then put the rest in 2 teaspoon measures into an ice cube tray and add a drop of water - freeze - pop them out of the tray and bag them for future use.

Thanks for a great article. I'm ever-working toward making the most of what I purchase and consume, while making the least impact. Great thoughts here.

This is what I call living Mind to Mouth. With better skills in the kitchen you can really re-calibrate your sense of the cost of food. When you know how to plan meals it is easy to see how far a given veggie or piece of meat will go. The average American throws out a 1/4 of their food bought. You can't have this much waste AND balk at $7/lb ground beef from local grass-eating cows.

Thanks for this post, it is beautifully written. I write about this topic very consistently and it's always nice to hear others beat a similar drum. mindotmouth.org

The current economy has reinforced my desire to eat economically. I have a stock bag in the freezer and like my mother I make large pots of soup and freeze portions for future meals. I am lucky to have a bread machine - make a loaf, freeze the slices.

Great post. You offer up some great ideas on how to make the most of your food dollars. I completely agree that if you approach food in the way you reference here, it makes sense to buy the good stuff and it isn't more expensive than buying $3.99 TV dinners every night. I also save bean liquor for adding flavor to soups.

Well said, Tamar. Those of us in more-northern climes crave fresh things by this point in the winter, but your tips are good reminders of how far we can stretch our food, especially when we have good ingredients to start.

Never mind saving money, this reminds us not to waste food. As we try to adjust our way our life to accommodate our ever growing population, it is incumbent on all of us to use resources respectfully and thoughtfully.

Your post resembles the true situation of the middle class people who are suffering the effects of recession. But I don't worry about the cost of food I spend all that i have for buying vegetables and bread.
