		<description>It&#039;s high time that we instituted a WPA-like program to document the food traditions that live in our grandparent&#039; hands and are on the verge of disappearing. I want to see videos of salt-curing fish in the Library of Congress and workshops about it in middle school kitchen classrooms.</description>

Just discovered your collumn - great reads! I too find it interesting that often us city-born American farming acolytes can feel more fervent about preserving the old traditions than the sons and daughters of farmers in other parts of the world. I was just as excited to visit my grandparents in Russia this winter and have them give a detailed rundown of how they salt-cure their fish (the process, surprisingly, involves a syringe).</description>
